Fall is coming and in Ayurveda, that means we’re heading into Vata season which contains the elements of air and ether. For me it means I have to start incorporating some more cooked foods in with my raw foods to keep me grounded and warm. I want to share with you one of my favorite (easy) meals that helps me transition into fall – ‘Sushi Bowl’ created by Julie Morris (Super Food Cuisine). This filling & nourishing salad is easy to make, supports your thyroid from the seaweed, and provides vital minerals, vitamins, and enzymes all in one simple meal! Enjoy.
SUSHI IN A BOWL
Ingredients:
- 3 ½ cups cooked brown or wild rice, at room temperature
- 4 nori sheets
- 3 cups of sunflower sprouts, pea shoots or other favorite sprouts
- 1 handful onion sprouts or 2 finely sliced scallions
- 1 large avocado, peeled and cut into chunks
- 1 large carrot, grated
- 2 Tbs sesame seeds
- Ginger dressing or shoyu to taste
Place the cooked rice in a large bowl. Stack the nori sheets, then use scissors to cut in half. Re-stack and cut in half again, lengthwise, forming long strips. Snip the strips widthwise into thin pieces and set aside for a moment. Add all the vegetables to the rice and toss gently, then sprinkle in the nori and toss again. Make sure the nori is evenly distributed, or it will clump as it becomes soft. Sprinkle the sesame seeds on top and serve with the Ginger Dressing or shoyu; or season as desired.
Ginger Dressing ingredients:
- ½ cup apple juice
- 2 Tbs miso paste
- 2 Tbs peeled fresh ginger root, minced
- 2 large medjool dates, pits removed
- 1 Tbs + 1 tsp apple cider vinegar
Blend all ingredients together until smooth. Makes 2/3 cups (will last approximately 1 week in the fridge).
