Use food as medicine and you’ll find they work better than any synthetic medication on the market…this is especially true when it comes to balancing your hormones.
One of the best ways to balance your hormones and jumpstart your body’s ability to make the hormones it needs is to eat food & herbs that do just that.
Mushrooms are known for their anti-cancerous and hormone balancing effects, especially the 3 types I’ve included in this recipe. Soups are also the best way to keep your weight under control in the winter months when our body craves more fat and protein due to the cold winter days.
Here’s what you’ll need ~
- 2 Tbs ghee (or organic butter)
- 2 Tbs extra-virgin olive oil
- 1 cup chopped shallots (about 2 large one)
- 1 point button mushrooms, roughly chopped
- ½ pound remind mushrooms, chopped
- ½ pound baby shiitake mushrooms, chopped
- 3 cloves garlic, sliced
- 1 tsp fresh them leaves
- 1 tsp salt
- ½ cup plus 1 tbs dry sherry, divided
- 6 cups organic mushroom broth
- ¾ cup cashew cream (see recipe below)
In a large pot, heat ghee and olive oil over medium high heat. Add shallots and cook for approximately 4 minutes, or until lightly brown. Stir in the arrowroot start and cook for another minute – stir constantly.
Add the chopped mushrooms, garlic, thyme, and salt. Cook for about 5 minutes, until the mushrooms release their liquid.
Add ½ cup of the sherry, scraping bottom of pot. Cook for 1-2 minutes, until the liquid is mostly gone.
Add the broth and bring to a simmer. Cook for 10 minutes. Puree the soup in batches in a blender and return it to the pot. Stir in the cream and the remaining tbs of sherry.
Season to taste with salt & pepper. Garnish with thyme leaves if desired. Enjoy!
- 1 cup raw cashews soaked for a minimum of 5 hours
- 2 cups spring water
Blend in a high powered blender until smooth.
