Pumpkin is one of my favorite vegetables to eat in the fall, and what better way to enjoy this golden delicious veggie than as dessert, right?!
Pumpkins are full of anti-oxidants, helps to fight cancer, improves skin texture, reduces blood glucose levels, rich in Vitamin A which helps to keep our eyes healthy, and are loaded with fiber, keeping us feeling full longer and facilitating in weight loss.
I love this recipe because it also includes the 6 tastes that Ayurveda claims should be in every meal for optimal digestion and for balancing our dosha (constitution).
Here’s what you’ll need to make this delicious and moist treat:
- 1/3 cup honey
- 1/2 cup raw almond butter
- 1/2 cup organic pumpkin puree
- 2 eggs (organic, free range)
- 2 tsp pumpkin pie spice (can be bought ready made at most grocery stores)
- 1 tsp organic vanilla extract
- 1/4 tsp sea salt
- 1/2 tsp baking soda
Cooking Instructions:
Preheat oven to 350F and grease and 8″x8″ baking dish generously with coconut oil.
Combine all of the ingredients in a medium bowl, mix well until smooth. Pour the mixture into the greased pan, and bake at 350F for about 30-40 minutes, or until the edges are golden brown and the center is firm (insert a toothpick, if it comes out clean – it’s done).
Allow to cool for approximately 20-30 minutes and cut into squares. Enjoy with your favorite herbal tea.
