Fall = Kale…sharing one of my favorite Kale salad recipes…

Vegan or Vegetarian Superfood Caesar Salad With Kale

Serves 2-4


1 large bunch green kale, washed, stemmed and massaged
1-2 organic carrots, chopped or grated (optional)
2 tablespoons raw hemp seeds
Vegetarian option – add some fresh grated parmesan cheese


1 large garlic clove, pressed or grated
3 tablespoons raw tahini paste (you can also use prepared tahini from Trader Joe’s)
2 tablespoons raw apple cider vinegar
1 tablespoon fresh lemon juice
2 teaspoons organic tamari (wheat-free soy sauce)
Optional: 1/2 teaspoon toasted sesame seed oil


Prepare the kaleby washing it and cutting it up into bite size pieces, then massaging it with clean hands until it softens.  Whisk the dressing ingredients in a small mixing bowl, then drizzle over prepared raw kale and mix with your clean hands. Sprinkle with hemp seeds and freshly grated parmesan cheese (optional).
